Blueberry Chia Almond Overnight Oats
We've literally been eating those delicious Vegan Banana Bread Overnight Oats since I posted about them in June. And they are still phenomenal. But it was time for a change. Still the easiest, healthiest breakfast around, overnight oats are something that you can look forward to now that it's dark in the mornings.
Inspired by the cholesterol kicking benefits of blueberries and the digestive power of chia seeds, born were these ONO 2.0. Also, we added some nut butter for good measure (creamy/deliciousness). And while I'm sure version 3.0 isn't far behind, we'd be happy to keep these on the menu a while.
- 1/4 cup frozen blueberries
- 1/2 cup rolled oats
- 1/2 cup almond milk
- 2 tbsp cashew butter
- 2 tbsp almonds, sliced
- 1 tsp vanilla bean powder
- 1/2 tsp cinnamon
- 2 tbsp chia seeds
- 1 tsp maple syrup
- pinch of sea salt
1) Put everything in a mason jar, stir, and refrigerate overnight.
2) In the morning, it's ready to eat!
