Vegan Banana Bread Overnight Oats
Getting into a routine when your entire environment has changed is quite a conquest. From a car to the subway, from getting ready at home to at the gym, from eating breakfast at my table to at my desk, life has changed in a 180 degree kind of way. Naturally, being constantly challenged and amazed with the perpetual stimulus of learning a new job and a new city all at once, I was craving a little structure.
This breakfast recipe is one of my favorites. There's no day-of prep + it's portable, healthy, cheap, and fast. This week it was perfect, helping keep my mornings grounded in a really welcome way. Plus, the play on banana bread is delicious and pretty fun.
It's as easy as putting everything into a mason jar and into the fridge. The hardest part is not forgetting to toss it into my gym bag in the mornings ;)
- 1/2 ripe banana, mashed
- 1/2 cup rolled or quick oats
- 1/2 cup hemp/soy/almond milk
- 2 tbsp walnuts, chopped
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tbsp ground flaxseed
- 1 tsp maple syrup
- Pinch of sea salt
1) Put everything in a mason jar, stir, and refrigerate overnight.
2) In the morning, add some sliced banana or more nuts for texture (if you want) & eat!
